Vinificazione Grown in hillside vineyards with a yield of 8.000 kg per hectare, the grapes are harvested by hand using crates that contain up to 18 kg of fruit.
The bunches are carefully de-stemmed and the must is fermented in contact with its skins for 4-5 days. The wine becomes effervescent with its initial fermentation and does not undergo secondary fermentation. No sulfites are added at any point during production.
Red and purple with hints of violet. Intensely colored but transparent in the glass.
Nuanced, delightful aromas of wild strawberry, blackberry, raspberry, and other wild berries with a note of violet in the finish. Very dry in the mouth with mouth-watering acidity. This wine delivers complex flavors and lingering aromatics.
Excellent with Emilian dishes and a great pairing for classic salumi like strolghino, ciccioli (cracklings), and cotechino. A wonderful fresh aperitif wine to enjoy with savory finger food.
