The grapes are gently crushed and the must is separated from its solids after 1 hour.
Natural clarification takes places as the wine stabilizes through December and January, thus removing any impurities.
It is then transferred to pressurized and temperature-controlled vats where it becomes a sparkling wine.
This process, which takes 3-4 months, is followed by sterile filtration and bottling.
Excellent as an aperitif served with ice in the glass, ideal for long summer nights and celebrations and also a fantastic pairing for delicate charcuterie and fish dishes.
